Cherry Streusel Muffins

Happy Cherry Season!! Growing up in the Okanagan, I was fortunate enough to be surrounded by an endless amount of fresh seasonal fruits and veggies, so I was sure to take advantage of a family friend’s cherry orchard while we were visiting my parents in Osoyoos. But, I’m thinking we got a little carried away with our cherry picking, because I’m running low on ideas of how to convince everyone to finish them off!

That being said, I was flipping through recipe books looking for a muffin recipe that my kids would be guaranteed to love and that’s when it came on me! Growing up my mom would make these scrumptious blueberry streusel muffins!! I will admit there is a fair amount of sugar in this recipe, so be strategic to the time of day you allow your littles to enjoy this special treat. This recipe is, however, super versatile and can be used with any seasonal fruit, you can omit the sugary topping if you wish (though I highly recommend you give it a try) and/or cut down the amount of sugar in the muffin mixture.

Cherry Streusel Muffins

Yields 12 Muffins

Ingredients:

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup white sugar
  • 1 1/2 cups pitted, chopped cherries
  • 1/4 cup melted butter
  • 1 egg beaten
  • 1 cup milk

Muffin Topping:

  • 1/2 cup flour
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/4 cup melted butter
  • 1/4 tsp cinnamon

Directions:

  1. Preheat oven to 375 degrees celsius.
  2. Grease or line muffin tins.
  3. Sift the dry ingredients together and add your chopped cherries or fruit of choice.
  4. Whisk together the egg, milk and melted butter and fold into the dry ingredients. Be sure not to over mix!
  5. Fill each muffin cup 2/3 full.
  6. In a separate bowl, mix together the topping ingredients and sprinkle on top of each muffin. Topping should come together nice and crumbly. Add a little more butter if needed.
  7. Bake for 30 mins or until toothpick comes out clean.
  8. Enjoy!
