It’s been awhile since I’ve done a life update for you all! I know it’s lonnnggg overdue, so here’s the scoop on what we’ve been up to lately! I feel like with Spring comes new beginnings and a fresh start and that’s exactly the path we’re going down. You may have noticed I’ve left a few hints about some upcoming changes for our family, changes we weren’t ready for nor expecting. I know, I know.. quit being a Debbie Downer about it and just SPIT IT OUT!! Well..
We’re back!! What a trip! We were so excited to take off to Hawaii to spend some much needed time poolside and on the beach with our little family, but of course the stress of getting there in one piece weighted heavily on our minds!! Ben does not travel well! And not until recently connecting the dots.. I get motion sickness sooo it makes total sense that he could too! But we made it and as the title says we literally slept, ate, chilled on repeat and I wouldn’t have changed a thing!
The hubby and I tend to spend our evenings hanging out and catching up on the latest Netflix craze or box office movie. Buuuutt since he’s been traveling so much for work, I’ve been trying to indulge in some much needed ‘me time’ every once in awhile. It’s been a great way to recharge and unwind for the night. I think I may even sleep better.. !?
ALOHA! That’s right.. the time has finally come! We’re off to Honolulu today!! Seeing all of your beautiful holiday posts over these past couple of months has had me going through some serious vacay envy! With us moving soon, we didn’t think a family vacation was in the cards for us this year, buuutt we managed to make it work and we CAN. NOT. WAIT!!
I love me some quick and easy recipes, especially ones with limited dishes. Buuuttt I tend to lean towards heavier carbed meals just because it is easy and I know the kids will eat it. Coming from a more European upbringing, I also love me some heat and spice and have always enjoyed trying out different ethnic foods and recreating it myself! So one day, when I was craving to order-in from my favourrrite Thai restaurant with all my might, I fought back the urge and tried to make something similar with what I had in the fridge. The first couple of times, it was okay, nothing to rave about, but now.. I think I have it!!
